No yeast Coconut oil Cinnamon Rolls

So, I’m pretty much putting this here because this recipe rocks, and I’m sharing it and because I want to easily find it in the future. I’m not sure where it originated as a friend gave it to me written out on a paper so I typed it up and am just sharing. If you do find the original let me know and I’ll link to it.

These use no yeast so no rising time except 20 min of cooling dough in fridge it’s super fast, it’s super easy, they bake quick, they taste amazing with no glaze or anything on top, and the dough is like the softest dough ever when kneading!

Yeast Free Coconut Oil Cinnamon Rolls

Filling:
1/2 c sugar
2 tsp. cinnamon
dash salt
1 tbs melted coconut oil

Dough:
3 c flour sifted
3 tbs sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup coconut milk (carton) mixed with 1 tsp vinegar (makes buttermilk)
6 tbs melted coconut oil (not used all at once, divided into three 2tbs)
1/3 c pure maple syrup

Directions:
Preheat oven 425 degrees. Make filling for rolls. Combine all ingredients in a bowl and stir with a fork it’ll be crumbly like sand.

Next start on dough. Use lare bowl and sift dry ingredients together (3 c flour, baking soda, baking powder, salt)

Pour in mapble syrup, buttermilk mixture, add 2 tbs of melted coconut oil. Lightly stir mixture, will be sticky.

Using 1/4 cup sifted flour on counter top knead the dough. Form a smooth ball and put in a very lightly floured bowl, cover and set in fridge 20 minutes.

After 20 minutes, remove from fridge, dust counter with sifter, roll out the dough to desired thickness. Melt 2 tbs of coconut oil and brush over rolled out dough. Sprinkle the filling mixture on top of the melted coconut oil, add any additional fillings like raisins if wanted.

Carefully roll dough up. Cut roll into rolls usaing a knife or floss. They snould be about 1 inch thick.

Brush pan with remaining coconut oil. Place rolls on the pan and melt the remaining 2 tbs of coconut oil and brush tops and sides of cinnamon rolls.

Throw rolls in oven bake 15 min

My kids loved these and the two oldest ones are pretty picky!
